Even though it is sometimes as simple as grabbing the neck and squeezing; it is the most effective submission in MMA, no gi grappling and BJJ. Any time your head and neck are exposed, you are in danger of a guillotine choke.

The most basic way to escape the guillotine is to jump to the other side, but this is simply stopped by throwing a leg over your back. One of the most important things you need to do is hold and control the wrist to decrease the pressure.
Bernardo shows you how to actually roll out of the guillotine by giving up the mount position, very briefly, but he quickly rolls again and slips out of his opponent’s legs. The important detail with this is to put the hand in the hip to shrimp out and around your opponent’s legs.
